Importer's notes: The Sabon domaine in Châteauneuf-du-Pape consists of 15 hectares in 14 different parcels, with some of the vineyards having been in the domaine's family since 1540. Their holdings are remarkably situated at the heart of the appellation between Cabrieres, La Crau, Courthezon, and Nalys, allowing all of the their wines to benefit from the various nuances that point to a great Châteauneuf. (All the wines are produced from vineyards that the family owns.) The family has resisted the call to replant their oldest and lowest yielding vineyards because of their extraordinary expression and richness. Sabon is a traditionalist, but prefers to age his wines in samll oak barrels, none of which are new, for six months. He puts great emphasis on elegance rather than power.
